Is Sushi Halal? Mirin, Rice Vinegar and What to Ask
Sushi can be halal, but it depends on what is in it. Fish is halal by broad agreement [1][2]. Shellfish depends on your school [7][8]. The bigger issue is alcohol: sushi rice and sauces may contain mirin or sake, which many scholars and halal bodies say makes the dish not halal [3][4]. Ask before you order.

What the schools of thought say
| School | View | Source |
|---|---|---|
| Hanafi (Darul Iftaa Chicago) | Food cooked or mixed with mirin is not permissible because mirin is an intoxicant used as a direct ingredient; check that sushi has no mirin. | [3] |
| MUI (Indonesia) | Sake and mirin are khamr and are not allowed in food regardless of amount or cooking. | [4] |
| Seafood in sushi | Fish is halal for all schools. Shrimp, crab, octopus and other non-fish follow each school's seafood rules; Hanafis allow only fish (with shrimp debated), and Ja'fari rulings allow only scaled fish and shrimp. | [7][8][9] |
The fish: usually not the problem
The Qur'an makes the game of the sea lawful [1], and a sahih hadith calls the sea's dead lawful [2]. Fish needs no slaughter, so raw salmon, tuna or yellowtail is halal as fish.
Other seafood depends on your school. Shafi'i and Hanbali scholars allow all sea creatures [7]. The Hanafi school allows only fish, which rules out crab and octopus, while shrimp is debated [8]. Ja'fari rulings allow only fish with scales, plus shrimp [9]. Followers of that view may want to ask which fish is in each piece. See seafood, shrimp, crab, octopus and eel.
Mirin and sake: the main concern
Mirin is a sweet Japanese rice wine used in cooking. Traditional hon mirin has about 14% alcohol. Some aji-mirin or mirin-style seasonings have little or none, so you need to read the label [5].
Some sushi chefs add mirin or sake to the rice seasoning, glazes and sauces. Views on this:
- Darul Iftaa Chicago (Hanafi) says food cooked or mixed with mirin is not permissible because mirin is an intoxicant used as an ingredient. It advises checking that sushi has no mirin [3].
- LPPOM MUI (Indonesia) classes sake and mirin as khamr. It does not allow them in food, regardless of amount or whether the alcohol cooks off [4].
- A MUIS halal writer in Singapore says traditional mirin is not halal because of its alcohol content, and suggests halal-certified mirin-style products [5].

Rice vinegar
Sushi rice is seasoned with vinegar, sugar and salt. Vinegar itself has a strong basis in the sunnah. A hadith in Sahih Muslim praises vinegar as a condiment [6]. Scholars differ on vinegar made from wine. According to a summary on IslamOnline, the Hanafi school generally allows it, while the Shafi'i school separates wine that turns to vinegar on its own from wine turned into vinegar on purpose [10]. Rice vinegar is usually brewed from rice, not wine, so this debate matters less here.
The practical issue is that some sushi vinegars and seasonings include added alcohol or wine-based ingredients. A MUIS halal writer advises checking rice vinegar labels for alcohol or wine additives [5]. See rice vinegar and vinegar.
What to ask at a sushi restaurant
Most sushi places in the US are not halal certified. Before you order, ask:
- Is there mirin or sake in the sushi rice? This affects every roll and nigiri.
- What's in the sauces? Eel sauce and teriyaki often contain mirin. See eel sauce.
- What's in the rolls? Some rolls include bacon, or tempura with beer batter.
- Is the imitation crab plain? Some brands add wine or mirin.
- Which soy sauce do you use? Brewed soy sauce can contain trace alcohol. See soy sauce.
If the rice has mirin, simple sashimi (fish with no rice) is often the safest choice.
